- 2 tablespoons olive oil
- 2 whole heads of garlic, cloves separated and peeled
- 1 medium yellow onion, chopped
- 6 cups low-sodium chicken or vegetable broth
- 2 sprigs fresh thyme or 1/2 teaspoon dried thyme
- 1 bay leaf
For Serving:
- 4 slices day-old French bread or baguette
- 4 large eggs
- Salt and black pepper to taste
- Grated Parmesan or Gruyère cheese for garnish (optional)
- Chopped parsley for garnish
Instructions
- Prepare the Soup: Heat olive oil in a large pot, cook garlic until golden, then add onion. Pour in broth, add thyme, bay leaf, salt, and pepper. Simmer for 20–25 minutes.
- Blend the Soup: Remove bay leaf and thyme, partially puree the soup using an immersion blender.
- Toast the Bread: Toast bread slices until crisp.
- Poach the Eggs: Crack eggs into the soup one at a time and poach for 3–4 minutes.
- Serve: Place a toasted bread slice in each bowl, ladle soup over, and garnish with cheese and parsley. Serve hot.
