Ingredients
Scale
Dry Ingredients
- 1 cup all-purpose flour
- 1 cup yellow cornmeal
- 1 tablespoon baking powder
- 1/2 teaspoon salt
Wet Ingredients
- 1 cup milk
- 2 large eggs
- 1/4 cup butter, melted
- 2 tablespoons honey or sugar (optional)
Optional Add-Ins
- 1–2 jalapeños, finely chopped
- 1 tablespoon fresh herbs (such as chives or parsley), chopped
Instructions
- Prepare the batter: In a large mixing bowl, whisk together the all-purpose flour, cornmeal, baking powder, and salt. In a separate bowl, beat the eggs, then add the milk, melted butter, and honey or sugar if using. Combine the wet ingredients with the dry ingredients until just mixed. Fold in the jalapeños and herbs if desired.
- Preheat the waffle iron: Heat your waffle iron according to the manufacturer’s instructions and lightly grease it to prevent sticking.
- Cook the waffle bites: Spoon small portions of batter onto the waffle iron to create bite-sized pieces. Close the lid and cook for 3-5 minutes or until the waffle bites are golden brown and cooked through.
- Cool and serve: Carefully remove the waffle bites and let them cool completely before serving or storing.
- Store properly: Place cooled waffle bites in an airtight container and refrigerate for up to 3 days. For longer storage, freeze in a single layer on a baking sheet until solid, then transfer to a freezer-safe bag for up to 2 months.
- Reheat: To reheat, warm in a toaster or toaster oven until crispy, about 3-5 minutes, or bake in an oven preheated to 350°F (175°C) for 5-10 minutes. Frozen waffle bites can be baked directly from frozen for 10-15 minutes at 350°F (175°C).
Notes
- For a sweeter version, increase honey or sugar as desired.
- Jalapeños add a spicy kick; omit if serving to children or sensitive eaters.
- Fresh herbs brighten the flavor but can be substituted or omitted.
- Waffle bites can be served with butter, honey, or your favorite dipping sauce.
- Ensure the waffle iron is well greased to avoid sticking.
