Description

Coconut Clusters are a delightful no-bake treat combining the rich flavor of chocolate with the tropical texture of shredded coconut. These easy-to-make clusters are perfect as a healthy snack or indulgent dessert, featuring a balance of sweet and salty notes with optional toppings like nuts and dried fruit to customize your bite.

Ingredients

Scale

Base Ingredients

  • 2 cups unsweetened shredded coconut
  • 1 cup semi-sweet chocolate chips or dark chocolate chips
  • 1 tablespoon coconut oil
  • ¼ teaspoon sea salt
  • ½ teaspoon vanilla extract (optional)

Toppings (Optional)

  • Chopped nuts
  • Dried fruit

Instructions

  1. Prepare Baking Sheet: Line a baking sheet with parchment paper to prevent sticking and to easily transfer the clusters after setting.
  2. Melt Chocolate: In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each, until the chocolate is fully melted and smooth.
  3. Add Vanilla Extract: Stir in the vanilla extract if using, to enhance the flavor profile.
  4. Mix Ingredients: Add the shredded coconut to the melted chocolate mixture and stir until the coconut is evenly coated with chocolate.
  5. Form Clusters: Using a spoon, scoop small clusters of the mixture onto the prepared baking sheet, spacing them evenly.
  6. Add Toppings and Salt: Sprinkle each cluster with a pinch of sea salt and optional toppings like chopped nuts or dried fruit to add texture and flavor contrast.
  7. Chill Clusters: Place the baking sheet in the refrigerator for 20–30 minutes or until the clusters are firm and set.
  8. Store: Once the clusters are set, transfer them to an airtight container and store in the refrigerator for up to one week to maintain freshness.

Notes

  • For a sweeter version, use sweetened shredded coconut or drizzle extra melted chocolate on top before chilling.
  • To make these clusters vegan, choose dairy-free chocolate chips.
  • Ensure clusters are fully cooled and set before storing to prevent them from melting or sticking together.
  • Experiment with different mix-ins like toasted nuts, seeds, or dried fruits for added flavor and texture.
