Scale
Base Ingredients
- 2 cups unsweetened shredded coconut
- 1 cup semi-sweet chocolate chips or dark chocolate chips
- 1 tablespoon coconut oil
- ¼ teaspoon sea salt
- ½ teaspoon vanilla extract (optional)
Toppings (Optional)
- Chopped nuts
- Dried fruit
Instructions
- Prepare Baking Sheet: Line a baking sheet with parchment paper to prevent sticking and to easily transfer the clusters after setting.
- Melt Chocolate: In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each, until the chocolate is fully melted and smooth.
- Add Vanilla Extract: Stir in the vanilla extract if using, to enhance the flavor profile.
- Mix Ingredients: Add the shredded coconut to the melted chocolate mixture and stir until the coconut is evenly coated with chocolate.
- Form Clusters: Using a spoon, scoop small clusters of the mixture onto the prepared baking sheet, spacing them evenly.
- Add Toppings and Salt: Sprinkle each cluster with a pinch of sea salt and optional toppings like chopped nuts or dried fruit to add texture and flavor contrast.
- Chill Clusters: Place the baking sheet in the refrigerator for 20–30 minutes or until the clusters are firm and set.
- Store: Once the clusters are set, transfer them to an airtight container and store in the refrigerator for up to one week to maintain freshness.
Notes
- For a sweeter version, use sweetened shredded coconut or drizzle extra melted chocolate on top before chilling.
- To make these clusters vegan, choose dairy-free chocolate chips.
- Ensure clusters are fully cooled and set before storing to prevent them from melting or sticking together.
- Experiment with different mix-ins like toasted nuts, seeds, or dried fruits for added flavor and texture.
