Description

Classic Buckeyes are delightful no-bake peanut butter and chocolate candies that resemble the nut of the buckeye tree. These treats feature a rich, creamy peanut butter center coated partially in smooth semisweet chocolate, making them perfect for holidays, gift boxes, or enjoying as a sweet snack.

Ingredients

Scale

Peanut Butter Mixture

  • 1 1/2 cups creamy peanut butter
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 3 1/2 to 4 cups powdered sugar

Chocolate Coating

  • 2 cups semisweet or dark chocolate chips
  • 2 tablespoons shortening or coconut oil (for smoother dipping)

Instructions

  1. Prepare the Peanut Butter Dough: In a large mixing bowl, beat together the creamy peanut butter, softened unsalted butter, vanilla extract, and salt until the mixture is smooth and creamy. Gradually add the powdered sugar, one cup at a time, mixing thoroughly until you form a stiff dough that holds its shape without crumbling.
  2. Form the Buckeyes: Roll the peanut butter dough into 1-inch balls and arrange them evenly on a baking sheet lined with parchment paper. Place the tray in the refrigerator or freezer and chill for at least 30 minutes to firm up the balls.
  3. Melt the Chocolate: In a microwave-safe bowl, combine the semisweet or dark chocolate chips with the shortening or coconut oil. Heat the mixture in 30-second intervals, stirring between each, until the chocolate is fully melted and smooth.
  4. Dip the Buckeyes: Using a toothpick, dip each chilled peanut butter ball about three-quarters of the way into the melted chocolate, leaving a small circle of peanut butter visible at the top to mimic a buckeye nut. Allow excess chocolate to drip off before placing the coated buckeye back onto the parchment-lined baking sheet.
  5. Set the Chocolate: Return the dipped buckeyes to the refrigerator and chill for 15 to 20 minutes or until the chocolate coating is completely set.
  6. Storage: Store the finished buckeyes in an airtight container in the refrigerator. They will keep fresh for up to 2 weeks, making them ideal for preparing in advance.

Notes

  • Using a stand mixer can speed up the preparation of the peanut butter dough.
  • For an even firmer texture, freeze the peanut butter balls before dipping them in chocolate.
  • These buckeyes are perfect for holiday trays, gift boxes, or as freezer-friendly treats ready whenever you crave them.
