Main Dough:

  • 1 ½ cups warm water (110°F)
  • 2 ¼ teaspoons active dry yeast (1 packet)
  • 1 tablespoon granulated sugar
  • 4 cups all-purpose flour
  • 1 teaspoon salt
  • 2 tablespoons unsalted butter, melted
  • 1/2 cup baking soda
  • 4 cups hot water (for baking soda bath)

For Topping:

  • 1/4 cup melted butter
  • 1/2 cup granulated sugar
  • 1 tablespoon ground cinnamon

Instructions

  1. Prepare Dough: In a large mixing bowl, combine warm water, yeast, and sugar. Let sit for 5 minutes until foamy. Add flour, salt, and melted butter, and mix until a soft dough forms.
  2. Knead and Rise: Knead on a floured surface for 5–7 minutes until smooth and elastic. Place dough in a greased bowl, cover, and let rise for 1 hour or until doubled.
  3. Preheat and Prepare: Preheat oven to 400°F (200°C) and line two baking sheets with parchment paper. In a large bowl, stir baking soda into 4 cups of hot water.
  4. Shape and Bake: Divide dough into 12 pieces and roll each into a rope about 18 inches long. Twist into pretzel shapes. Dip each pretzel into the baking soda bath, then place on the prepared baking sheets. Bake for 10–12 minutes or until golden brown.
  5. Finish: Brush warm pretzels with melted butter and toss in cinnamon sugar mixture to coat. Serve warm.
