Description

This Christmas Salmon recipe is a festive and flavorful dish perfect for holiday gatherings. The salmon is glazed with a delicious mixture of Dijon mustard, maple syrup, and aromatic herbs, then topped with pomegranate seeds and pistachios for a colorful and crunchy finish.

Salmon:

  • 1 side of salmon (about 2 to 3 pounds), skin on and pin bones removed

Glaze:

  • 2 tablespoons olive oil
  • 1 tablespoon Dijon mustard
  • 2 tablespoons maple syrup or honey
  • 2 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme leaves
  • 1 orange, zested and juiced
  • Salt and black pepper to taste

Garnish:

  • ½ cup pomegranate seeds
  • ¼ cup chopped pistachios
  • Fresh rosemary sprigs and orange slices for garnish (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C) and line a large baking sheet with parchment paper.
  2. Prepare the salmon: Place the salmon skin-side down on the prepared baking sheet.
  3. Make the glaze: In a small bowl, whisk together olive oil, Dijon mustard, maple syrup, minced garlic, chopped rosemary, thyme, orange zest, orange juice, salt, and black pepper.
  4. Glaze the salmon: Brush the mixture evenly over the top of the salmon.
  5. Bake the salmon: Bake for 18 to 22 minutes, or until it flakes easily with a fork and is just cooked through.
  6. Rest and garnish: Remove from the oven, let it rest for a few minutes, then sprinkle with pomegranate seeds and chopped pistachios. Garnish with rosemary sprigs and orange slices if desired.
