Dry Ingredients:
- 2 1/4 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground nutmeg
Wet Ingredients:
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 cup eggnog
- 1 teaspoon vanilla extract
- 1/2 teaspoon rum extract (optional)
For the glaze:
- 1 cup powdered sugar
- 2–3 tablespoons eggnog
- Pinch of nutmeg
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- Mix dry ingredients: In a medium bowl, whisk together the flour, baking powder, salt, and nutmeg.
- Prepare wet mixture: In a large bowl, cream the butter and sugar. Beat in the eggs, one at a time, then mix in the vanilla and rum extracts. Alternately add the flour mixture and eggnog, starting and ending with the flour, mixing just until combined.
- Bake: Pour the batter into the prepared pan and bake for 50–60 minutes until a toothpick inserted comes out clean. Let cool before adding glaze.
- Make glaze: Whisk together powdered sugar, eggnog, and nutmeg until smooth. Drizzle over the cooled bread.
