  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 cup eggnog
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon rum extract (optional)

For the glaze:

  • 1 cup powdered sugar
  • 23 tablespoons eggnog
  • Pinch of nutmeg

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. Mix dry ingredients: In a medium bowl, whisk together the flour, baking powder, salt, and nutmeg.
  3. Prepare wet mixture: In a large bowl, cream the butter and sugar. Beat in the eggs, one at a time, then mix in the vanilla and rum extracts. Alternately add the flour mixture and eggnog, starting and ending with the flour, mixing just until combined.
  4. Bake: Pour the batter into the prepared pan and bake for 50–60 minutes until a toothpick inserted comes out clean. Let cool before adding glaze.
  5. Make glaze: Whisk together powdered sugar, eggnog, and nutmeg until smooth. Drizzle over the cooled bread.
