Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or foil to prepare for baking the salmon.
  2. Prepare the Salmon: Place the salmon fillet in the center of the prepared baking sheet, skin side down if using skin-on fillet.
  3. Make the Marinade: In a small bowl, whisk together olive oil, minced garlic, Dijon mustard, honey or maple syrup, lemon juice, lemon zest, chopped fresh rosemary and thyme, salt, and black pepper until well combined.
  4. Brush the Salmon: Generously brush the marinade mixture over the top of the salmon, ensuring it is well coated for maximum flavor.
  5. Bake the Salmon: Bake in the preheated oven for 15 to 20 minutes, or until the salmon flakes easily with a fork and is cooked through but still moist.
  6. Rest the Salmon: Remove the salmon from the oven and let it rest for a few minutes to allow the juices to redistribute.
  7. Garnish and Serve: Transfer the salmon to a serving platter. Top with pomegranate seeds and chopped pistachios if using. Garnish with fresh rosemary sprigs and lemon slices for a festive presentation. Serve warm.
