Description

This Chocolate Mint Pie is a refreshing and indulgent dessert featuring a rich chocolate wafer crust filled with a creamy mint-infused filling made from melted marshmallows, creme de menthe, and whipped cream. Perfectly chilled, it offers a cool, minty flavor balanced by delicious chocolate notes—ideal for gatherings or a special treat.

Ingredients

Scale

Crust

  • 1 1/2 cups chocolate wafer crumbs
  • 1/3 cup melted butter
  • 1/4 cup sugar

Filling

  • 1 1/2 cups milk
  • 32 marshmallows
  • 1/2 cup creme de menthe
  • 1 cup whipping cream
  • Green food coloring (optional)

Instructions

  1. Prepare the crust: Combine the chocolate wafer crumbs, melted butter, and sugar in a medium bowl. Mix thoroughly until the crumbs are evenly coated with butter and sugar. Press the mixture firmly and evenly into the bottom and up the sides of a pie pan to form a solid crust. Set aside.
  2. Make the mint filling: In a saucepan over medium heat, gently warm the milk and marshmallows, stirring occasionally until the marshmallows have completely melted into the milk, creating a smooth mixture. Remove the saucepan from heat and stir in the creme de menthe. Allow this mixture to cool to room temperature to prevent melting the whipped cream later.
  3. Whip the cream: In a separate chilled bowl, whip the whipping cream until stiff peaks form. Carefully fold the whipped cream into the cooled mint mixture, combining them gently to maintain the airy texture. If desired, add a few drops of green food coloring to enhance the minty appearance and fold until well mixed.
  4. Assemble and chill: Pour the creamy mint filling into the prepared chocolate crust, smoothing the top evenly. Cover and refrigerate the pie for at least 2 hours to allow it to set and develop flavors before serving.

Notes

  • Use good-quality chocolate wafers for a richer crust flavor.
  • If creme de menthe is unavailable, you can substitute with mint extract but use less to avoid overpowering the pie.
  • Ensure the mint filling mixture is cooled before folding in whipped cream to maintain texture.
  • Adding green food coloring is optional but adds a festive touch, especially for holidays.
  • Store leftovers covered in the refrigerator and consume within 2-3 days for best freshness.
