Description

Delight in these refreshing and indulgent Chocolate Frozen Raspberries, a healthy vegan and gluten-free snack that combines ripe, juicy raspberries with rich, melted dark chocolate. Perfect for a quick treat or an elegant dessert, these frozen delights are easy to make and irresistibly delicious.

Ingredients

Scale

Fruit

  • 1 cup fresh raspberries

Chocolate Coating

  • 1/2 cup dark chocolate chips or chopped dark chocolate (at least 60% cocoa)
  • 1 teaspoon coconut oil (optional, for smoother melting)

Toppings (Optional)

  • Sea salt
  • Crushed nuts

Instructions

  1. Prepare the Raspberries: Line a small baking sheet with parchment paper. Rinse the raspberries gently and thoroughly pat them completely dry using a paper towel to remove excess moisture. Place the raspberries on a tray and freeze for 15 to 20 minutes to chill thoroughly.
  2. Melt the Chocolate: In a heatproof bowl, combine the dark chocolate and coconut oil. Melt the mixture over a pot of simmering water (double boiler) or microwave in 20-second intervals, stirring between each until smooth and fully melted.
  3. Dip the Raspberries: Remove the chilled raspberries from the freezer. Using a fork or skewer, carefully dip each raspberry halfway or fully into the melted chocolate, allowing any excess to drip back into the bowl.
  4. Arrange and Add Toppings: Place each dipped raspberry on the prepared parchment-lined baking sheet. If desired, sprinkle a pinch of sea salt or crushed nuts over the chocolate coating to add texture and flavor.
  5. Freeze to Set: Return the baking sheet to the freezer and allow the chocolate to firm up for at least 30 minutes.
  6. Serve: Enjoy these chocolate frozen raspberries straight from the freezer for a refreshing snack or let them sit at room temperature for 1 to 2 minutes to soften slightly before serving.

Notes

  • You can substitute dark chocolate with white or milk chocolate, or create a variety by mixing different types.
  • Store any leftover chocolate frozen raspberries in an airtight container in the freezer for up to 2 weeks to maintain freshness and chocolate texture.
