Description

Dry Ingredients:

  • 2 cups all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt

Wet Ingredients:

  • 2 ripe avocados (mashed until smooth)
  • 2 cups granulated sugar
  • 3 large eggs
  • 2 teaspoons pure vanilla extract
  • 1 cup buttermilk
  • 1/2 cup hot water
  • 1/2 cup vegetable oil

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a medium bowl, whisk together the dry ingredients.
  3. In a large mixing bowl, beat the avocado and sugar until creamy. Add eggs one at a time, then mix in vanilla and oil.
  4. Alternate adding dry ingredients and buttermilk to the avocado mixture.
  5. Slowly pour in hot water and mix until smooth. Divide batter into pans.
  6. Bake for 30–35 minutes, then cool before frosting.

Notes

  • This cake is naturally moist due to the avocado.
  • Whole wheat pastry flour can be substituted for a nuttier flavor.
  • Try topping with chocolate ganache or cream cheese frosting.
