Dry Ingredients:
- 2 cups all-purpose flour
- 1 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon salt
Wet Ingredients:
- 2 ripe avocados (mashed until smooth)
- 2 cups granulated sugar
- 3 large eggs
- 2 teaspoons pure vanilla extract
- 1 cup buttermilk
- 1/2 cup hot water
- 1/2 cup vegetable oil
Instructions
- Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
- In a medium bowl, whisk together the dry ingredients.
- In a large mixing bowl, beat the avocado and sugar until creamy. Add eggs one at a time, then mix in vanilla and oil.
- Alternate adding dry ingredients and buttermilk to the avocado mixture.
- Slowly pour in hot water and mix until smooth. Divide batter into pans.
- Bake for 30–35 minutes, then cool before frosting.
Notes
- This cake is naturally moist due to the avocado.
- Whole wheat pastry flour can be substituted for a nuttier flavor.
- Try topping with chocolate ganache or cream cheese frosting.
