This Chipotle Shrimp Bowl is a delicious and easy-to-make meal that features spicy marinated shrimp served over a bed of rice and topped with black beans, corn, avocado, and fresh veggies.

For the Shrimp:
- 1 lb large shrimp (peeled and deveined)
- 2 tablespoons olive oil
- 2 chipotle peppers in adobo sauce (minced)
- 1 tablespoon adobo sauce
- 2 cloves garlic (minced)
- 1 teaspoon smoked paprika
- ½ teaspoon cumin
- ½ teaspoon salt
- juice of 1 lime
For the Bowl:
- 2 cups cooked rice (white, brown, or cilantro-lime)
- 1 cup black beans (drained and rinsed)
- 1 cup corn kernels (fresh, canned, or frozen)
- 1 cup diced cherry tomatoes
- 1 avocado (sliced)
- ¼ cup chopped red onion
- ¼ cup chopped fresh cilantro
- lime wedges for serving
Instructions
- Prepare the Shrimp: In a bowl, combine olive oil, chipotle peppers, adobo sauce, garlic, smoked paprika, cumin, salt, and lime juice. Add shrimp and marinate for 15–30 minutes. Cook shrimp in a skillet until pink and cooked through.
- Assemble the Bowls: Divide cooked rice among bowls. Top with black beans, corn, tomatoes, avocado, red onion, and cooked shrimp. Garnish with cilantro and serve with lime wedges.
Notes
- For a lighter version, use cauliflower rice.
- You can add sour cream or chipotle crema for extra richness.
- Marinate the shrimp longer for deeper flavor.
