Description

This Chipotle Shrimp Bowl is a delicious and easy-to-make meal that features spicy marinated shrimp served over a bed of rice and topped with black beans, corn, avocado, and fresh veggies.

  • ½ teaspoon cumin
  • ½ teaspoon salt
  • juice of 1 lime

For the Bowl:

  • 2 cups cooked rice (white, brown, or cilantro-lime)
  • 1 cup black beans (drained and rinsed)
  • 1 cup corn kernels (fresh, canned, or frozen)
  • 1 cup diced cherry tomatoes
  • 1 avocado (sliced)
  • ¼ cup chopped red onion
  • ¼ cup chopped fresh cilantro
  • lime wedges for serving

Instructions

  1. Prepare the Shrimp: In a bowl, combine olive oil, chipotle peppers, adobo sauce, garlic, smoked paprika, cumin, salt, and lime juice. Add shrimp and marinate for 15–30 minutes. Cook shrimp in a skillet until pink and cooked through.
  2. Assemble the Bowls: Divide cooked rice among bowls. Top with black beans, corn, tomatoes, avocado, red onion, and cooked shrimp. Garnish with cilantro and serve with lime wedges.

  • For a lighter version, use cauliflower rice.
