Description

These Chicken Skewers with Parmesan and Garlic are a flavorful and easy-to-make grilled main course. Marinated in a zesty blend of olive oil, garlic, Parmesan cheese, lemon juice, and Italian seasoning, the tender chicken cubes are stacked on skewers and grilled to perfection, making them perfect for a quick weeknight dinner or a summer barbecue.

Ingredients

Scale

Marinade and Chicken

  • 1 ½ pounds boneless, skinless chicken breasts, cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • ½ cup grated Parmesan cheese
  • 1 tablespoon lemon juice
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons chopped fresh parsley
  • Wooden or metal skewers

Instructions

  1. Prepare the marinade: In a large bowl, whisk together olive oil, minced garlic, grated Parmesan cheese, lemon juice, dried Italian seasoning, salt, and black pepper until well combined.
  2. Marinate the chicken: Add the chicken cubes to the marinade and toss thoroughly to coat each piece evenly. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 2 hours for more intense flavor.
  3. Soak wooden skewers (if using): If you are using wooden skewers, submerge them in water for at least 30 minutes before grilling to prevent burning.
  4. Preheat the grill: Heat your grill or grill pan to medium-high heat, ensuring it is hot before cooking.
  5. Thread the chicken onto skewers: Carefully thread the marinated chicken pieces onto the skewers, leaving a little space between pieces to allow even cooking.
  6. Grill the skewers: Place the skewers on the grill and cook for 10–12 minutes, turning occasionally to ensure all sides are cooked thoroughly and have nice grill marks.
  7. Garnish and serve: Once cooked, remove the skewers from the grill and sprinkle with fresh chopped parsley. Serve immediately with your choice of sides like rice, salad, or grilled vegetables.

Notes

  • For an extra kick, add a pinch of red pepper flakes to the marinade.
  • If you don’t have access to a grill, these skewers can be baked in a preheated oven at 425°F for 15–18 minutes, turning halfway through.
  • Soaking wooden skewers prevents them from burning on the grill.
  • Serve with complementary sides such as steamed rice, mixed green salad, or grilled vegetables for a complete meal.
