Ingredients
Scale
Chicken
- 2 boneless, skinless chicken breasts, thinly sliced
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- ½ teaspoon paprika
- Salt and pepper to taste
Garlic Butter
- 1 tablespoon butter
- 2 cloves garlic, minced
Sandwich Assembly
- 4 slices of Italian or French bread
- ½ cup shredded mozzarella cheese
- 2 tablespoons mayonnaise (optional)
- 2 tablespoons chopped parsley (optional)
- 1 tablespoon grated Parmesan cheese (optional)
Instructions
- Season the Chicken: In a bowl, toss the thinly sliced chicken breasts with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.
- Cook the Chicken: Heat a skillet over medium heat and cook the seasoned chicken for 5 to 7 minutes, stirring occasionally until the chicken is fully cooked through and has a slight golden color on the edges. Remove from heat and set aside.
- Prepare Garlic Butter: In a small pan, melt the butter over low heat, then add the minced garlic. Cook gently for 1 to 2 minutes until the garlic is fragrant but not browned. Remove from heat.
- Butter the Bread: Using a brush, spread the warm garlic butter on one side of each slice of bread evenly.
- Assemble the Sandwich: Place two slices of bread buttered side down on a clean surface. Distribute the cooked chicken evenly over the bread, then sprinkle the shredded mozzarella cheese on top. If using, spread mayonnaise over the other two slices of bread and then place them on top of the cheese with the buttered side up.
- Grill the Sandwich: Heat a skillet or panini press over medium heat. Place the assembled sandwiches in the skillet or press and cook for 2 to 3 minutes per side, pressing gently, until the bread is golden brown and the cheese has melted thoroughly.
- Serve: Remove the sandwiches from the heat, slice in half, and optionally garnish with chopped parsley and grated Parmesan cheese. Serve warm for best taste.
Notes
- Add sliced tomatoes or fresh spinach for an extra layer of freshness and nutrition.
- For a spicy kick, mix hot sauce or sriracha into the mayonnaise before spreading.
- Use pre-cooked rotisserie chicken as a time-saving alternative for this recipe.
