Chicken Fajita Soup:
- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 1 small yellow onion, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 (14.5-ounce) can diced tomatoes with juices
- 1 (4-ounce) can diced green chiles (optional)
- 4 cups low-sodium chicken broth
- 1/2 cup heavy cream or half-and-half
- juice of 1 lime
- chopped cilantro, shredded cheese, and avocado for garnish
Instructions
- Heat olive oil in a large pot over medium-high heat. Add chicken and cook for 5–6 minutes until browned and cooked through. Remove from the pot and set aside.
- In the same pot, add sliced onion and bell peppers. Sauté for 5–6 minutes until softened. Stir in garlic, cumin, chili powder, paprika, oregano, salt, and pepper. Cook for 1 minute until fragrant.
- Add diced tomatoes, green chiles (if using), and chicken broth. Return cooked chicken to the pot. Bring to a boil, then reduce heat and simmer for 15 minutes.
- Stir in heavy cream and lime juice, then simmer for another 3–5 minutes. Taste and adjust seasoning if needed.
- Serve hot, topped with cilantro, shredded cheese, and avocado if desired.
