  • 3 bell peppers (red, yellow, and green, sliced)
  • 1 large yellow onion (sliced)
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/4 cup chopped fresh cilantro (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish with nonstick spray.
  2. Prepare the chicken and veggies: In a large mixing bowl, toss the sliced chicken, bell peppers, and onion with olive oil, chili powder, cumin, garlic powder, paprika, salt, pepper, and red pepper flakes if using.
  3. Bake the casserole: Spread the seasoned mixture evenly into the prepared baking dish. Cover with foil and bake for 25 minutes. Remove the foil, sprinkle both cheeses evenly over the top, and return to the oven uncovered for an additional 10–12 minutes, or until the cheese is melted and bubbly and the chicken is cooked through.
