Avocado Spread:
- 1 ripe avocado (mashed)
- 2 tablespoons mayonnaise

Additional Ingredients:
- 2 cooked chicken breasts (sliced or shredded)
- 4 slices of your favorite bread (toasted if desired)
- 4 slices of tomato
- 1/2 cup baby spinach or lettuce
- 2 slices provolone or Swiss cheese (optional)
Instructions
- Prepare Avocado Spread: In a small bowl, mix the mashed avocado, mayonnaise, Dijon mustard, lemon juice, garlic powder, salt, and pepper until creamy and well combined.
- Assemble Sandwich: Spread the avocado mixture evenly over all four slices of bread. Layer two slices of bread with chicken, tomato slices, spinach or lettuce, and cheese if using. Top with the remaining slices of bread to form two sandwiches.
- Serve: Slice in half and serve immediately.
