Chicken:
- 1 lb boneless, skinless chicken breasts or thighs (cut into bite-sized pieces)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon dried thyme
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Potatoes:
- 1 lb baby potatoes (halved or quartered)
- 1 tablespoon butter
- 2 cloves garlic (minced)
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions
- Cook Potatoes: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the potatoes and season with half of the garlic powder, paprika, thyme, onion powder, salt, and pepper. Cook for 10–12 minutes until golden and fork-tender. Remove and set aside.
- Cook Chicken: Add the remaining olive oil to the skillet. Cook chicken with remaining spices for 6–8 minutes until browned and cooked. Push chicken aside, melt butter, and sauté garlic. Return potatoes and cook for 2–3 minutes.
- Serve: Garnish with parsley and serve hot.
