  • 2 pounds Yukon Gold potatoes, peeled and cubed
  • 4 tablespoons butter

  • 1 cup shredded sharp cheddar cheese

Instructions

  1. Season and Sear Chicken: Season the boneless chicken breasts with salt and black pepper. Heat 2 tablespoons of olive oil in a large skillet over medium heat and sear each chicken breast for 5 to 6 minutes on each side until golden brown and cooked through. Remove from skillet and set aside.
  2. Prepare Garlic Gravy: In the same skillet, melt 2 tablespoons of butter. Add minced garlic and sauté for about 1 minute until fragrant but not browned. Whisk in 2 tablespoons of all-purpose flour and cook for 1 minute to form a roux.
  3. Add Liquids and Simmer: Gradually pour in 1 1/2 cups of chicken broth while whisking continuously to prevent lumps. Stir in 1/2 cup of heavy cream, 1/2 teaspoon dried thyme, and 1/2 teaspoon onion powder. Simmer the gravy for 3 to 5 minutes until it thickens.
  4. Combine Chicken and Gravy: Return the seared chicken breasts to the skillet with the thickened gravy. Spoon the gravy over the chicken and let it simmer for an additional 2 to 3 minutes to meld flavors together.
  5. Prepare Mashed Potatoes: Place peeled and cubed Yukon Gold potatoes in a pot of salted boiling water. Cook for 15 to 20 minutes until the potatoes are fork-tender. Drain well and return potatoes to the pot.
