- 3/4 cup whole milk (or as needed)
Instructions
- Prepare the Chicken and Broth: Heat olive oil in a large pot or Dutch oven over medium heat. Add the cubed chicken and cook for 6-7 minutes, until browned. Remove the chicken and set aside.
- Sauté Vegetables: In the same pot, add diced onion, carrots, and celery. Sauté for 4-5 minutes, until softened. Add minced garlic and cook for 1 minute until fragrant.
- Simmer Broth: Pour in chicken broth and bring to a simmer. Stir in heavy cream, dried thyme, dried parsley, salt, and pepper. Let simmer gently for 10 minutes to develop flavors.
- Make Biscuit Dumplings: In a large bowl, whisk together flour, baking powder, salt, garlic powder, and dried thyme. Add the cold cubed butter and use a pastry cutter or your fingers to work the butter into the dry ingredients until the mixture is crumbly. Gradually add milk, stirring just until combined; the dough should be thick and slightly sticky.
- Combine Chicken and Dumplings: Return the cooked chicken to the pot with the broth and vegetables. Using a spoon, drop spoonfuls of the biscuit dough over the simmering broth, making sure not to overcrowd.
- Cook Dumplings: Cover the pot tightly with a lid and cook for 15-20 minutes until the dumplings are puffed up and a toothpick inserted into the center comes out clean.
