Cheesy Enchiladas Bake Ingredients:
- 8 corn tortillas
- 2 cups shredded cooked chicken or ground beef (optional)
- 2 cups shredded Mexican blend cheese
- 1 can (10 oz) red enchilada sauce
- 1/2 cup sour cream
- 1/2 cup diced onion
- 1/2 tsp garlic powder
- 1/2 tsp cumin
- Salt and black pepper to taste
- Chopped cilantro and sliced green onions for garnish (optional)
Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- Prepare the filling: In a medium bowl, combine the chicken or beef (if using), 1 cup of shredded cheese, sour cream, diced onion, garlic powder, cumin, salt, and pepper. Mix until well blended.
- Assemble the enchiladas: Spread a few tablespoons of enchilada sauce on the bottom of the baking dish. Fill each tortilla with 2–3 tablespoons of the mixture, roll tightly, and place seam-side down in the dish. Pour the remaining enchilada sauce evenly over the top. Sprinkle with the remaining 1 cup of cheese.
- Bake: Cover with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
- Serve: Let cool slightly, then garnish with cilantro and green onions before serving.
