Chicken:

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 tablespoon fajita seasoning

Vegetables:

  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 small red onion, thinly sliced

Cheese and Garnish:

  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 2 tablespoons fresh cilantro, chopped
  • Lime wedges for serving

Instructions

  1. Preheat oven: Preheat oven to 400°F and lightly grease a 9×13-inch baking dish.
  2. Prepare chicken: Rub chicken breasts with olive oil and sprinkle fajita seasoning evenly over both sides. Place chicken in the prepared baking dish.
  3. Add vegetables: Arrange sliced peppers and onion around and on top of the chicken.
  4. Bake: Cover with foil and bake for 20 minutes. Remove foil, sprinkle cheddar and Monterey Jack cheese over the chicken and vegetables, and return to the oven uncovered for 10–15 minutes, until cheese is melted and bubbly and chicken reaches an internal temperature of 165°F.
  5. Serve: Garnish with fresh cilantro and serve with lime wedges.

  • You can make your own fajita seasoning with chili powder, cumin, paprika, garlic powder, and cayenne.
  • This dish pairs perfectly with rice, tortillas, or a fresh green salad.
