- Cook the Filling: In a large skillet over medium heat, cook the ground beef until browned, breaking it up with a spatula as it cooks. Add the chopped onion and minced garlic to the skillet and cook for an additional 3-4 minutes until the onion is soft and translucent. Drain any excess fat from the skillet.
- Add Seasonings and Cheese: Stir in the chopped pickles, ketchup, mustard, salt, and pepper. Remove the skillet from heat and let the mixture cool slightly. Once cooled, stir in the shredded cheddar cheese.
- Assemble the Egg Rolls: Lay an egg roll wrapper on a clean, flat surface with one corner pointing towards you in a diamond shape. Spoon about 2-3 tablespoons of the cheeseburger filling onto the center of the wrapper. Fold the bottom corner up over the filling, then fold in the sides tightly. Roll the wrapper away from you, sealing the top corner with a bit of water. Repeat with remaining wrappers and filling.
- Fry the Egg Rolls: In a large deep skillet or frying pan, heat about 1-2 inches of vegetable oil over medium-high heat until it reaches 350°F (175°C). Carefully add a few egg rolls at a time and fry them for 2-3 minutes per side or until they are golden brown and crispy. Remove the egg rolls with a slotted spoon and drain on a paper towel-lined plate.
