Instructions
- Make the Roux: In a medium saucepan over medium heat, melt the butter. Whisk in the flour and cook for 1–2 minutes, stirring constantly, to form a smooth roux that will thicken the sauce.
- Add Milk: Slowly pour in the warmed milk while whisking continuously to avoid lumps. Keep whisking as the mixture thickens, which should take about 3–5 minutes.
- Melt Cheese and Season: Lower the heat to low and gradually stir in the shredded sharp cheddar cheese, a handful at a time, until fully melted and smooth. Mix in the garlic powder, salt, and cayenne pepper if using, stirring well to combine.
- Serve: Remove from heat and serve immediately over hot fries, or transfer the sauce to a small crock or bowl for dipping.
