Description

Charred Cilantro Lime Chicken Thighs are juicy, flavorful chicken thighs marinated in a zesty mixture of fresh cilantro, lime juice, garlic, and spices, then grilled or oven-baked to perfection with a beautiful char. This recipe offers a perfect balance of tangy, smoky, and savory notes ideal for a quick weeknight dinner or a weekend barbecue.

Ingredients

Scale

Chicken

  • 4 bone-in chicken thighs (skin-on)

Marinade

  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup freshly squeezed lime juice
  • 3 garlic cloves, minced
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Prepare the Marinade: In a bowl, combine lime juice, minced garlic, chopped cilantro, ground cumin, paprika, olive oil, salt, and pepper to create a flavorful marinade.
  2. Marinate the Chicken: Place the chicken thighs in a resealable bag or shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated. Seal or cover and refrigerate for at least 30 minutes, preferably overnight for deeper flavor penetration.
  3. Preheat Cooking Surface: Preheat your grill to medium-high heat (around 400°F) or your oven to 425°F (220°C) if baking.
  4. Cook the Chicken: Remove the marinated chicken from the fridge and place it directly on the grill grates or on a baking sheet if using the oven. Grill or bake the chicken thighs for 7-8 minutes per side until the internal temperature reaches 165°F (75°C) and the skin is nicely charred and crispy.
  5. Rest and Serve: Allow the chicken to rest for 5 minutes after cooking to retain its juices. Serve garnished with fresh lime wedges and additional cilantro for extra flavor.

Notes

  • Marinating overnight will intensify the flavors and tenderize the chicken.
  • Ensure the grill is properly preheated to achieve the best char and to prevent sticking.
  • Use a meat thermometer to accurately check doneness and avoid overcooking.
  • You can bake the chicken in the oven if grilling isn’t an option, but grilling adds a smokier flavor.
  • Serve with a side of rice, grilled vegetables, or a fresh salad for a complete meal.
