- 1/2 cup chicken broth
- 3/4 cup heavy cream

Instructions
- Season and Sear Chicken: Season the chicken breasts or thighs with salt and black pepper. Heat olive oil in a cast iron skillet over medium-high heat. Place the chicken in the skillet and sear for 5–6 minutes on each side until golden brown and fully cooked. Remove the chicken from the skillet and set aside.
- Cook Mushrooms: Reduce the heat to medium and add the unsalted butter to the same skillet. Once melted, add the sliced mushrooms. Cook them for 6–8 minutes, stirring occasionally, until they are softened and nicely browned.
- Add Garlic: Add the minced garlic to the mushrooms and sauté for about 1 minute until fragrant.
- Make the Sauce: Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet to incorporate more flavor. Stir in the heavy cream, grated Parmesan cheese, dried thyme, and season with a pinch of salt and black pepper. Let the sauce simmer gently for 3–4 minutes until it begins to thicken slightly.
- Combine Chicken and Sauce: Return the seared chicken to the skillet, spooning the creamy mushroom sauce over the top. Let the dish simmer together for another 2–3 minutes to heat through and allow the flavors to meld.
