Dry Ingredients
- 1 cup all-purpose flour
- 1/2 cup sugar
- 1/2 teaspoon ground cardamom
- 1/4 teaspoon salt
- 1/2 teaspoon baking soda
Wet Ingredients
- 1/4 cup unsalted butter, softened
- 1/4 cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
- 2 tablespoons milk (or dairy-free alternative)
Add-ins
- 1 tablespoon poppy seeds
Instructions
- Preheat the oven: Set your oven to 350°F (175°C) and line a baking sheet with parchment paper to prepare for baking.
- Mix dry ingredients: In a medium bowl, whisk together the all-purpose flour, sugar, ground cardamom, salt, and baking soda until evenly combined.
- Cream wet ingredients: In a separate large bowl, cream the softened unsalted butter and vegetable oil together until the mixture is light and fluffy. Then, add the large egg and vanilla extract, mixing until smooth.
- Combine wet and dry: Gradually add the dry ingredient mixture into the wet ingredients, stirring continuously until a dough forms.
- Add poppy seeds and milk: Mix in the poppy seeds, then pour in the milk (or dairy-free alternative), stirring until the dough is smooth and slightly soft in texture.
- Shape the cookies: Using a tablespoon, scoop the dough into balls and place them on the prepared baking sheet, spacing each ball about 2 inches apart to allow for spreading.
- Flatten and bake: Gently flatten each dough ball with the back of a spoon to a cookie shape. Bake in the preheated oven for 10 to 12 minutes, until the edges turn golden brown.
- Cool the cookies: Remove the baking sheet from the oven and let the cookies cool for a few minutes before transferring them to a wire rack to cool completely for the best texture.
Notes
- For a dairy-free option, substitute milk with almond, soy, or oat milk and use a dairy-free butter alternative.
- Make sure the butter is softened to room temperature to achieve proper creaming with the oil.
- Store cookies in an airtight container at room temperature for up to 5 days.
- If you prefer a stronger cardamom flavor, you can increase the amount of ground cardamom to 3/4 teaspoon.
- Do not over-flatten the dough balls to retain a soft center in the cookies.
