For Cajun Rice:
- 1 tablespoon olive oil
- 1 pound ground beef or ground pork
- 1 small onion, finely chopped
- 1 green bell pepper, finely chopped
- 2 celery stalks, finely chopped
- 3 cloves garlic, minced
- 1½ teaspoons Cajun seasoning
- ½ teaspoon dried thyme
- ½ teaspoon smoked paprika
- 1 cup long-grain white rice
- 2 cups beef or chicken broth
- 2 green onions, sliced (optional)
Instructions
- Heat the olive oil: Heat the olive oil in a large skillet over medium heat.
- Cook the meat: Add the ground meat and cook until browned, breaking it up with a spoon.
- Add vegetables: Add the onion, bell pepper, celery, and garlic. Cook until vegetables are soft.
- Season and cook rice: Stir in Cajun seasoning, thyme, and smoked paprika. Add rice, coat with seasonings, pour in broth, and simmer.
- Finish and serve: Remove from heat, let sit covered, fluff with a fork, and top with green onions.
