- 1 (15-ounce) can diced tomatoes
- 1 (15-ounce) can tomato sauce
- 1 (15-ounce) can kidney beans, drained and rinsed
- 1 (15-ounce) can black beans, drained and rinsed
- 1 1/2 cups chicken broth
- 2 tablespoons Cajun seasoning
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
- Chopped green onions and sour cream for garnish (optional)
Instructions
- Heat olive oil in a large pot over medium-high heat. Cook diced chicken until browned; set aside.
- Add onion, bell pepper, celery, and garlic to the pot. Cook until softened.
- Return chicken to the pot and add tomatoes, tomato sauce, beans, and broth. Season with Cajun spices, paprika, oregano, salt, and pepper.
- Bring to a boil, then simmer for 30–35 minutes until thickened. Serve hot with garnishes.
