Instructions

  1. Sauté the Aromatics: Heat olive oil in a large pot over medium heat. Add the chopped onion, sliced carrots, and chopped celery. Sauté for 5 to 7 minutes until the vegetables begin to soften and the onions are translucent.
  2. Add Garlic: Stir in the minced garlic and cook for another 1 minute, allowing the garlic to release its fragrance without burning.
  3. Cook the Cabbage: Add the chopped green cabbage to the pot and continue cooking for 5 minutes, stirring occasionally to combine the flavors.
  4. Add Liquids and Seasonings: Pour in the canned diced tomatoes with their juice and the vegetable broth. Season with dried oregano, dried basil, paprika, salt, and black pepper. Stir well to mix all ingredients.
  5. Simmer the Soup: Bring the mixture to a boil over medium-high heat. Then reduce the heat to low and let the soup simmer uncovered for 25 to 30 minutes, or until the cabbage and other vegetables are tender.
  6. Finish and Serve: Stir in the optional lemon juice and adjust the seasoning if needed. Serve the soup hot, garnished with freshly chopped parsley for a fresh, herbal touch.
