- â…“ cup cooked chopped bacon
- ÂĽ cup hot sauce
- ½ cup bottled ranch dressing
- 1 cup shredded cheddar cheese
Seasonings
- ÂĽ tsp onion powder
- ÂĽ tsp garlic powder
- Salt and pepper to taste
Instructions
- Preheat and prepare baking rack: Preheat your oven to 400ÂşF (204ÂşC). Line a rimmed baking sheet with foil and place a baking rack on top to catch drippings and ensure even cooking.
- Prepare mushroom caps: Remove the stems from the mushrooms and place the caps upside down on the baking rack. Bake for 15 minutes to release moisture. After baking, remove from oven and let the mushrooms drain any excess liquid.
- Mix filling: In a medium bowl, combine the cream cheese, chopped cooked chicken, cooked chopped bacon, onion powder, garlic powder, hot sauce, ranch dressing, shredded cheddar cheese, and season with salt and pepper. Mix until well blended and creamy.
- Stuff mushrooms: Spoon the buffalo chicken cream cheese mixture evenly into each mushroom cap, filling them generously. Arrange the stuffed mushrooms back on the baking rack on the sheet.
- Bake stuffed mushrooms: Bake in the preheated oven for an additional 15 minutes, until the cheese is melted and the filling is hot and bubbly. Once baked, garnish with chopped green onions or parsley if desired and serve warm.
Notes
- For a spicier bite, increase the hot sauce amount or use a hotter variety.
- To save time, use pre-cooked rotisserie chicken.
- Make sure to drain mushrooms after initial bake to prevent sogginess.
- These can be prepared ahead and baked just before serving.
- Substitute ranch dressing with blue cheese dressing for a classic buffalo flavor twist.
