Buffalo Chicken Filling

- Salt & black pepper, to taste

- 1 sheet puff pastry, thawed
- 1 egg, beaten (for egg wash)
- 1 tablespoon butter, melted
- 1 teaspoon chopped fresh parsley (for garnish)
- ¼ teaspoon flaky sea salt (optional)
Instructions
- Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
- Prepare the Buffalo Chicken Filling: In a bowl, thoroughly combine the shredded chicken, buffalo sauce, softened cream cheese, shredded mozzarella and cheddar cheese, ranch dressing, garlic powder, onion powder, smoked paprika, salt, and black pepper until well mixed.
- Prepare the Pastry: On a lightly floured surface, roll out the thawed puff pastry sheet to smooth any creases and create an even thickness. Then cut the pastry into 9 equal squares.
- Fill and Seal the Pastry: Place a spoonful of the buffalo chicken mixture in the center of each pastry square. Bring the corners up and together, pinching the edges firmly to seal and form a small pouch to encase the filling.
- Bake the Pastry Bites: Arrange the filled pastries seam-side down on the prepared baking sheet. Brush the tops with the beaten egg wash to help them develop a beautiful golden color. Bake in the preheated oven for 18-20 minutes or until the puff pastry is puffed, golden brown, and flaky.
- Finish and Serve: Remove the pastries from the oven and immediately brush with melted butter for extra richness. Sprinkle with freshly chopped parsley and flaky sea salt if desired. Serve warm with ranch or blue cheese dressing for dipping and enjoy!
