Penne Pasta:
- 12 oz penne pasta
Chicken:
- 1.5 lbs boneless skinless chicken breasts (cut into bite-sized pieces)
Other Ingredients:
- 2 tablespoons olive oil
- 4 cloves garlic (minced)
- 1 pint cherry tomatoes (halved)
- 1/2 cup fresh basil (chopped)
- 1/4 cup balsamic vinegar
- 1 tablespoon balsamic glaze (optional)
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Cook the Penne Pasta: Cook penne pasta according to package instructions until al dente. Drain and set aside.
- Cook the Chicken: In a skillet, heat olive oil and sauté chicken pieces until browned and fully cooked. Remove and set aside.
- Prepare the Sauce: In the same skillet, sauté garlic, add cherry tomatoes, then return chicken to the skillet along with cooked pasta, basil, balsamic vinegar, and balsamic glaze. Cook until heated through.
- Finish the Dish: Stir in mozzarella and Parmesan cheeses until melted. Serve garnished with basil.
Notes
- For a lighter version, skip the mozzarella and use just Parmesan.
- This dish is great served warm or at room temperature.
- Whole wheat pasta or gluten-free pasta can be used as alternatives.
