  3. Add Vegetables: Stir in the green and red bell peppers, onion, and Cajun seasoning; cook for 3–4 minutes until the vegetables soften.
  4. Incorporate Shrimp: Add the shrimp and cook just until pink, about 2 minutes.
  5. Scramble Eggs: Reduce heat to low and pour in the egg mixture. Stir gently with a spatula, cooking until the eggs are softly scrambled and just set.
  6. Finish and Serve: Remove from heat, sprinkle with parsley and green onions, and serve immediately with hot sauce on the side if desired.
