Brownie Layer
- 1 boxed brownie mix plus ingredients listed on the box
Cream Filling
- 2 cups heavy whipping cream, cold
- 0.5 cup powdered sugar
- 1 teaspoon vanilla extract
- 8 ounces cream cheese, softened
- 0.5 cup granulated sugar
- 1 cup chocolate pudding, prepared and chilled
Additional Ingredients
- 1.5 cups crushed chocolate sandwich cookies or chocolate wafers
- Chocolate shavings or mini chocolate chips for topping
Instructions
- Prepare Brownies: Follow the boxed brownie mix instructions and bake the batter in a 9 x 13 inch pan. Once baked, allow the brownies to cool completely, then cut them into small bite-sized cubes.
- Whip the Cream: In a large mixing bowl, beat the cold heavy whipping cream with powdered sugar and vanilla extract until stiff peaks form. Set aside this whipped cream.
- Mix Cream Cheese and Pudding: In another bowl, beat the softened cream cheese with granulated sugar until smooth and creamy. Gently fold in the chilled prepared chocolate pudding until well combined.
- Combine Cream Layers: Carefully fold the whipped cream into the cream cheese and pudding mixture until fully incorporated and light.
- Assemble the Cake: In a deep baking dish or loaf pan, spread a layer of half the brownie cubes evenly on the bottom. Spoon half of the cream mixture over the brownies, then sprinkle with half of the crushed chocolate cookies. Repeat the layering with the remaining brownie cubes, cream mixture, and crushed cookies.
- Add Toppings and Refrigerate: Finish the top layer by sprinkling chocolate shavings or mini chocolate chips. Cover the dish tightly and refrigerate for at least 4 hours or preferably overnight to allow the cake to set and flavors to meld.
