Description

These Brownie Mix Cookies are a quick and delicious treat made from a boxed fudge brownie mix combined with basic pantry ingredients. They deliver rich chocolate flavor and a fudgy texture reminiscent of brownies, but in convenient cookie form. Perfect for when you want a sweet, chocolatey dessert without the fuss.

Ingredients

Scale

Cookie Dough

  • 18.3 oz box Fudge Brownie Mix
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 cup chocolate chips (preferably dark chocolate)

Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking and ensure even baking.
  2. Mix dough: In a large bowl, combine the brownie mix, vegetable oil, and eggs. Stir the ingredients together until a soft dough forms, being careful not to overmix.
  3. Add chocolate chips: Gently fold the chocolate chips into the dough to evenly distribute them throughout.
  4. Form cookies: Use a cookie scoop or spoon to drop 1 to 1.5-inch thick dough balls onto the prepared baking sheet, spacing them about 2 inches apart to allow for spreading.
  5. Optional topping: For extra chocolate richness, you can add a few extra chocolate chips on top of each dough ball before baking.
  6. Bake: Place the baking sheet in the preheated oven and bake the cookies for about 10 minutes. Check to see if the cookies have set; if not, bake for an additional 1 to 2 minutes until firm but still soft in the center.
  7. Cool: Remove the cookies from the oven and let them cool on the baking sheet for approximately 10 minutes before transferring them to a wire rack to cool completely.

Notes

  • You can substitute vegetable oil with melted butter for a richer flavor.
  • Dark chocolate chips are preferred, but milk or semi-sweet chips will also work.
  • Do not overbake; cookies should remain soft and fudgy.
  • Store cookies in an airtight container at room temperature for up to 4 days.
  • For a nutty twist, consider adding chopped nuts to the dough.
