Description

These Bison Meatballs are a delicious and lean alternative to traditional beef meatballs, combining ground bison with fresh herbs, garlic, and spices. Perfectly baked or pan-fried to juicy perfection, they make a wholesome main course served with marinara sauce over pasta or as hearty appetizers.

Ingredients

Scale

Meatballs

  • 1 lb ground bison
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1/4 cup breadcrumbs (or almond flour for low-carb)
  • 1 egg
  • 2 tablespoons milk or water
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried oregano

For Cooking

  • Olive oil for cooking (if pan-frying)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it to prevent sticking.
  2. Prepare Meatball Mixture: In a large bowl, combine the ground bison, finely chopped onion, minced garlic, breadcrumbs, egg, milk (or water), chopped parsley, Worcestershire sauce, salt, black pepper, and dried oregano. Mix gently using your hands or a spoon until just combined, taking care not to overmix to keep the meatballs tender.
  3. Shape Meatballs: Form the mixture into 1 1/2-inch meatballs. Place them evenly spaced on the prepared baking sheet to ensure even cooking.
  4. Bake Meatballs: Bake the meatballs in the preheated oven for 15 to 18 minutes, or until their internal temperature reaches 160°F (71°C) and they are browned and cooked through.
  5. Alternative Cooking Method – Pan-Frying: Heat 1 to 2 tablespoons of olive oil in a skillet over medium heat. Cook the meatballs for 6 to 8 minutes, turning occasionally until all sides are browned and the meatballs are fully cooked.
  6. Serve: Serve the meatballs warm with your favorite marinara sauce. They pair perfectly over pasta, rice, or can be served on skewers as tasty appetizers.

Notes

  • Bison is leaner than beef, so avoid overcooking to maintain juicy meatballs.
  • For added moisture and flavor, consider adding a little grated Parmesan cheese or shredded zucchini to the mixture.
  • Use gluten-free breadcrumbs to make this recipe gluten-free.
