  • 2 tablespoons cold water
  • 1 1/2 cups heavy cream (chilled)
  • 1/2 cup powdered sugar
  • For the Topping:

    • 1/2 cup fresh berries (for garnish)
    • whipped cream (optional)
    • mint leaves (optional)

Instructions

  1. Make the Cake Base: In a mixing bowl, cream the butter and sugar, add egg and vanilla, then mix in dry ingredients and milk. Bake until done. Let cool.
  2. Prepare the Berry Mousse: Cook berries, sugar, and lemon juice until thickened. Blend, strain, mix with gelatin, then fold in whipped cream.
  3. Assemble the Cake: Pour mousse over cake base in pan, refrigerate until set.
