For the Beef:
- 1½ lbs beef sirloin or ribeye, cut into 1½-inch cubes
- 2 tablespoons olive oil
- 2 tablespoons soy sauce
- 1 tablespoon lemon juice
- 1 tablespoon red wine vinegar
- 2 teaspoons garlic powder
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- ½ teaspoon ground cumin
- ½ teaspoon salt
- ¼ teaspoon black pepper
Vegetables for Skewers:
- 1 red bell pepper, cut into chunks
- 1 green bell pepper, cut into chunks
- 1 red onion, cut into chunks
- 1 zucchini, sliced thick
- Metal or soaked wooden skewers
Instructions
- Marinate the Beef: In a large bowl, whisk together olive oil, soy sauce, lemon juice, red wine vinegar, garlic powder, paprika, oregano, cumin, salt, and pepper. Add beef cubes and toss to coat. Marinate in the refrigerator for at least 1 hour.
- Preheat the Grill: Heat the grill to medium-high heat. Thread marinated beef and vegetables onto skewers.
- Grill the Kebabs: Grill for 8–10 minutes, turning occasionally, until beef is cooked and vegetables are charred. Rest before serving.
Notes
- For medium-rare beef, aim for an internal temperature of 130–135°F.
- Serve with rice, flatbread, or cucumber-yogurt sauce.
