Ingredients
Scale
Beef Mixture
- 1 tablespoon olive oil
- 1 pound ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tablespoon taco seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 (14.5 oz) can black beans, drained and rinsed
Nachos Assembly
- 1 bag tortilla chips (about 10–12 ounces)
- 1 1/2 cups shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
Toppings
- 1/2 cup diced tomatoes
- 1/4 cup sliced black olives
- 1/4 cup sliced jalapeños (optional)
- 1/4 cup sour cream
- 1/4 cup chopped green onions
- 1/4 cup chopped fresh cilantro
- Optional: guacamole or salsa for serving
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for melting the cheese and finishing the nachos.
- Cook Onion and Beef: Heat olive oil in a large skillet over medium heat. Add the diced onion and cook for 2–3 minutes until softened. Add the ground beef and cook for 5–7 minutes, breaking it up with a spoon, until browned. Drain any excess fat to keep the dish less greasy.
- Season and Add Beans: Stir in minced garlic, taco seasoning, salt, black pepper, and the drained black beans. Cook for an additional 2–3 minutes until the mixture is well combined and heated through, infusing all the flavors.
- Assemble Nachos: Spread half of the tortilla chips evenly on a large baking sheet or oven-safe platter. Layer half of the beef and bean mixture over the chips, then sprinkle half the shredded cheddar and Monterey Jack cheeses. Repeat the layering with the remaining chips, beef mixture, and cheese, creating a fully loaded stack.
- Bake Nachos: Place the assembled nachos in the preheated oven and bake for 8–10 minutes until the cheese is melted and bubbly, ensuring a gooey, delicious topping.
- Add Fresh Toppings and Serve: Remove the nachos from the oven. Immediately top with diced tomatoes, sliced black olives, jalapeños if using, sour cream, chopped green onions, and fresh cilantro. Serve warm, accompanied by guacamole or salsa on the side for additional flavor if desired.
Notes
- You can customize the toppings based on your preferences. For example, add hot sauce or use pepper jack cheese for a spicier version.
- These nachos make a great party appetizer or an easy, satisfying dinner.
- To make it vegetarian, omit the beef and add more beans or a plant-based meat substitute.
- Be sure to drain excess fat from the cooked beef to keep the nachos from becoming soggy.
