- 1/2 teaspoon ground cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 (4 oz) can diced green chiles
- 1/2 cup red enchilada sauce
- 1 1/2 cups shredded cheddar cheese, divided
For assembling:
- 8 flour tortillas (8-inch size)
- Chopped fresh cilantro for garnish (optional)
Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C).
- Cook the beef filling: In a skillet, cook onion, garlic, and ground beef. Add spices, green chiles, and enchilada sauce. Stir in cheese.
- Assemble the enchiladas: Spoon beef mixture onto tortillas, roll up, and place in a baking dish.
- Bake: Pour remaining sauce over the enchiladas, top with cheese, and bake for 20–25 minutes.
- Serve: Garnish with cilantro and enjoy!
