Description

  • 1 pound ground beef
  • ½ cup breadcrumbs
  • 1 egg
  • ¼ cup milk
  • ½ small onion (finely chopped)

Seasonings:

  • 2 tablespoons ketchup
  • 1 tablespoon Worcestershire sauce
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Additional:

  • ½ cup barbecue sauce (divided)
  • Chopped parsley for garnish (optional)

Instructions

  1. Preheat oven and prepare tin: Preheat oven to 375°F and lightly grease a muffin tin.
  2. Mix meatloaf mixture: In a large bowl, combine ground beef, breadcrumbs, egg, milk, onion, ketchup, Worcestershire sauce, garlic powder, salt, and pepper. Mix until just combined; do not overwork the meat.
  3. Shape and bake: Divide the mixture into muffin cups, press gently to shape. Spoon barbecue sauce over each mini meatloaf. Bake for 20–25 minutes until internal temperature reaches 160°F.
  4. Finish and serve: Brush with remaining barbecue sauce, let rest, then garnish with parsley.
