- 1 pound ground beef
- ½ cup breadcrumbs
- 1 egg
- ¼ cup milk
- ½ small onion (finely chopped)
Seasonings:
- 2 tablespoons ketchup
- 1 tablespoon Worcestershire sauce
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
Additional:
- ½ cup barbecue sauce (divided)
- Chopped parsley for garnish (optional)
Instructions
- Preheat oven and prepare tin: Preheat oven to 375°F and lightly grease a muffin tin.
- Mix meatloaf mixture: In a large bowl, combine ground beef, breadcrumbs, egg, milk, onion, ketchup, Worcestershire sauce, garlic powder, salt, and pepper. Mix until just combined; do not overwork the meat.
- Shape and bake: Divide the mixture into muffin cups, press gently to shape. Spoon barbecue sauce over each mini meatloaf. Bake for 20–25 minutes until internal temperature reaches 160°F.
- Finish and serve: Brush with remaining barbecue sauce, let rest, then garnish with parsley.
