Description

A wholesome and flavorful BBQ Chicken & Roasted Sweet Potato Bowl that combines tender shredded BBQ chicken, roasted sweet potatoes, fresh corn, crunchy red onion, and creamy avocado for a nutritious and satisfying meal perfect for lunch or dinner.

Ingredients

Scale

Chicken

  • 2 chicken breasts
  • 1/4 cup BBQ sauce

Vegetables

  • 2 cups sweet potatoes, cubed
  • 1 cup corn kernels
  • 1/2 red onion, chopped
  • 1 avocado, sliced

Instructions

  1. Preheat the Oven: Preheat oven to 400°F (200°C) to prepare for roasting the sweet potatoes.
  2. Roast the Sweet Potatoes: Spread the cubed sweet potatoes on a baking sheet. Optionally drizzle with a little olive oil. Roast in the oven for 25–30 minutes, flipping halfway through, until the potatoes are tender and lightly browned.
  3. Cook the Chicken: While the sweet potatoes roast, grill or bake the chicken breasts until they reach an internal temperature of 165°F (74°C) to ensure they are fully cooked.
  4. Shred the Chicken: Allow the chicken to cool slightly, then shred it into bite-sized pieces. Mix the shredded chicken with the BBQ sauce until well coated.
  5. Assemble the Bowls: Divide the roasted sweet potatoes, BBQ shredded chicken, corn kernels, chopped red onion, and avocado slices evenly between two bowls.
  6. Serve: Serve the bowls immediately for optimal freshness, or store in airtight containers for meal prep throughout the week.

Notes

  • For added flavor, drizzle the sweet potatoes with olive oil and season with salt and pepper before roasting.
  • You can substitute grilled chicken with rotisserie chicken for a quicker option.
  • Use fresh or frozen corn kernels according to availability.
  • To make it spicier, add a pinch of chili flakes or a drizzle of hot sauce.
  • This recipe is perfect for meal prep and stores well in the refrigerator for up to 3 days.
