Description

These Basic Cauliflower Fritters are a delicious way to enjoy cauliflower. Crispy on the outside and tender on the inside, these fritters make a fantastic appetizer or side dish.

Main Ingredients:

  • 1 medium head cauliflower, chopped into florets
  • 2 large eggs
  • 1/3 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 2 green onions, finely chopped
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 2 tablespoons chopped fresh parsley (optional)
  • olive oil or vegetable oil for frying

Instructions

  1. Prepare Cauliflower: Steam or boil the cauliflower florets until tender, about 8–10 minutes. Drain and let cool slightly, then mash with a fork or potato masher until mostly smooth with some small chunks.
  2. Mix Ingredients: In a large mixing bowl, combine the mashed cauliflower with eggs, flour, Parmesan cheese, green onions, garlic, salt, pepper, and paprika. Stir until a thick batter forms.
  3. Fry Fritters: Heat a thin layer of oil in a large nonstick skillet over medium heat. Scoop about 2 tablespoons of the mixture for each fritter and flatten slightly in the pan. Cook for 3–4 minutes per side or until golden brown and crispy.
  4. Serve: Transfer to a paper towel–lined plate to drain excess oil. Serve warm, garnished with parsley if desired.

  • You can substitute almond flour to make it gluten-free.
