Chicken Skewers:
- 1½ pounds boneless, skinless chicken thighs (cut into 1.5-inch cubes)
- 1 tablespoon olive oil
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon paprika
- Salt and black pepper to taste
- Wooden or metal skewers
Bang Bang Sauce:
- ½ cup mayonnaise
- 2 tablespoons sweet chili sauce
- 1 tablespoon Sriracha (adjust to taste)
- 1 tablespoon honey
- 1 teaspoon rice vinegar
Instructions
- Prep the Skewers: If using wooden skewers, soak them in water for at least 30 minutes. Toss chicken cubes with olive oil, garlic powder, onion powder, paprika, salt, and pepper. Thread onto skewers.
- Grill the Chicken: Preheat grill or grill pan over medium-high heat. Grill skewers for 4 to 5 minutes per side until cooked through and charred.
- Make the Bang Bang Sauce: Whisk together mayonnaise, sweet chili sauce, Sriracha, honey, and rice vinegar until smooth.
- Finish and Serve: Brush or drizzle cooked skewers with Bang Bang sauce. Serve warm with extra sauce for dipping.
