Description

Discover the perfect balance of crispy, roasted Yukon Gold potatoes with creamy, tangy baked feta cheese infused with fresh herbs and bright lemon. This baked feta potatoes recipe is an easy, flavorful side dish that combines simple ingredients for ultimate cheesy perfection with a Mediterranean twist.

Ingredients

Scale

Potatoes

  • 1.5 lbs small Yukon Gold potatoes, halved or quartered if large
  • 2 tablespoons olive oil
  • Salt, to taste
  • Freshly ground black pepper, to taste

Feta Mixture

  • 4 oz block of feta cheese
  • 2 cloves garlic, minced
  • 1 lemon, zested and juiced
  • 1/4 cup fresh dill, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons olive oil

Optional Garnishes

  • Kalamata olives
  • Sun-dried tomatoes
  • Extra crumbled feta
  • Fresh oregano

Instructions

  1. Preheat: Preheat your oven to 400°F (200°C) to prepare for roasting the potatoes.
  2. Prepare Potatoes: Wash the Yukon Gold potatoes thoroughly and halve or quarter them depending on size. Toss the potatoes with 2 tablespoons of olive oil, salt, and freshly ground black pepper until evenly coated.
  3. Roast Potatoes: Arrange the potatoes in a single layer on a parchment-lined baking sheet. Roast them in the preheated oven for 20 to 25 minutes until they are tender and have developed a slight golden brown color.
  4. Prepare Feta Mixture: While the potatoes roast, crumble the feta cheese into a medium mixing bowl. Add minced garlic, lemon zest, lemon juice, chopped fresh dill, chopped fresh parsley, and red pepper flakes if using. Drizzle the remaining 2 tablespoons of olive oil over the mixture and combine well to create a flavorful, creamy topping.
  5. Add Feta to Potatoes: Remove the roasted potatoes from the oven. Using a spoon, create small wells or spaces between the potatoes to hold the feta mixture.
  6. Spoon Feta Mixture: Evenly spoon the feta cheese mixture over and into the wells between the potatoes to cover them generously.
  7. Bake Again: Return the baking sheet to the oven and bake for another 10 to 15 minutes, or until the feta topping is melted, creamy, and lightly golden brown on top.
  8. Cool Slightly: Remove from the oven and let the dish cool for a few minutes to allow the flavors to meld and make it easier to serve.
  9. Garnish (Optional): For extra Mediterranean flavor, garnish with Kalamata olives, sun-dried tomatoes, extra crumbled feta cheese, and fresh oregano if desired.
  10. Serve: Serve the baked feta potatoes immediately while warm as a delicious side dish or vegetarian main course option.

Notes

  • You can substitute fresh herbs like oregano or chives depending on what you have on hand.
  • Red pepper flakes add a mild heat but are completely optional.
  • Use parchment paper for easier cleanup and to prevent sticking.
  • Make sure potatoes are cut uniformly so they roast evenly.
  • The dish pairs well with grilled meats or a fresh green salad for a balanced meal.
