Instructions

  2. Arrange Ingredients: Place the chicken breasts in a large baking dish or sheet pan. Arrange the sliced bell peppers and onions around and underneath the chicken to ensure even cooking and flavor distribution.
  3. Prepare Spice Mixture: In a small bowl, combine olive oil, chili powder, cumin, smoked paprika, garlic powder, onion powder, cayenne pepper if using, salt, black pepper, and lime juice. Whisk together until fully blended.
  4. Coat Chicken and Vegetables: Pour the spice mixture over the chicken breasts and vegetables. Toss gently to coat everything evenly with the seasoning blend for maximum flavor.
  5. Bake: Place the baking dish in the oven and bake for 25–30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the vegetables become tender.
  6. Broil for Char: For a slightly charred, smoky effect, broil for an additional 2–3 minutes at the end of baking. Watch carefully to prevent burning.
