Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the chicken and vegetables evenly.
- Arrange Ingredients: Place the chicken breasts in a large baking dish or sheet pan. Arrange the sliced bell peppers and onions around and underneath the chicken to ensure even cooking and flavor distribution.
- Prepare Spice Mixture: In a small bowl, combine olive oil, chili powder, cumin, smoked paprika, garlic powder, onion powder, cayenne pepper if using, salt, black pepper, and lime juice. Whisk together until fully blended.
- Coat Chicken and Vegetables: Pour the spice mixture over the chicken breasts and vegetables. Toss gently to coat everything evenly with the seasoning blend for maximum flavor.
- Bake: Place the baking dish in the oven and bake for 25–30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the vegetables become tender.
- Broil for Char: For a slightly charred, smoky effect, broil for an additional 2–3 minutes at the end of baking. Watch carefully to prevent burning.
- Rest and Serve: Remove the baking dish from the oven and let the chicken rest for 5 minutes to retain its juices. Slice the chicken and serve together with the baked vegetables. Garnish with fresh cilantro if desired.
