Description

Pickling Liquid

  • 1½ cups white vinegar
  • 1½ cups water
  • 1 tablespoon kosher salt
  • 1 tablespoon granulated sugar
  • 1 teaspoon dried oregano (preferably Mexican)
  • ½ teaspoon black peppercorns
  • 2 bay leaves

Instructions

  1. Sauté Vegetables: Heat the vegetable oil in a large saucepan over medium heat. Add the sliced carrots and sauté for 4–5 minutes, stirring occasionally to ensure even cooking.
  2. Add Aromatics: Add the sliced onion, jalapeños, and garlic to the saucepan. Cook for another 2–3 minutes until the vegetables are slightly softened but still crisp.
  3. Simmer in Pickling Liquid: Pour in the white vinegar, water, kosher salt, granulated sugar, dried oregano, black peppercorns, and bay leaves. Stir well to combine all ingredients.
  4. Cook Gently: Bring the mixture to a gentle boil, then reduce the heat and let it simmer for 5–7 minutes until the carrots are crisp-tender, absorbing the flavors of the brine.
  5. Cool and Store: Remove the saucepan from heat and let the mixture cool slightly. Transfer the vegetables and pickling liquid into clean glass jars or containers. Allow to cool completely before covering and refrigerating for at least 24 hours to develop the best flavor.
