For the cake:
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup milk
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
- Prepare the topping: Melt 1/4 cup butter in a saucepan over medium heat. Stir in the brown sugar and cook until dissolved and bubbly, about 2 minutes. Pour into the prepared pan and spread evenly. Arrange the apple slices over the brown sugar mixture.
- Make the cake batter: In a medium bowl, whisk together the flour, baking powder, cinnamon, and salt. In a large bowl, beat the softened butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each, then mix in the vanilla. Alternate adding the flour mixture and milk in three additions, beginning and ending with the flour. Mix until just combined.
- Bake: Pour the batter over the apples and smooth the top. Bake for 40–45 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 10–15 minutes, then carefully invert onto a serving plate.
