Ingredients
Scale
Fritter Bites
- 1 cup all purpose flour
- 1 ½ teaspoons baking powder
- ¼ teaspoon salt
- 2 tablespoons granulated sugar
- 1 teaspoon cinnamon
- 1 large egg
- ½ cup whole milk
- 2 ¼ cups Granny Smith apples, peeled and chopped
- 1–2 cups vegetable oil, for frying
Vanilla Glaze
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
- 3–4 tablespoons whole milk
Instructions
- Heat Oil: In a large frying pan, heat vegetable oil over medium heat until hot enough for frying (around 350°F or until a small drop of batter sizzles and rises to the surface).
- Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, salt, granulated sugar, and cinnamon until well combined. Set aside.
- Mix Wet Ingredients: In another bowl, whisk the egg and whole milk together until fully blended.
- Combine Batter: Pour the wet mixture into the dry ingredients and stir gently until just combined, being careful not to overmix to keep the batter light.
- Add Apples: Fold the chopped Granny Smith apples into the batter evenly.
- Fry Fritters: Using a heaping teaspoon, drop spoonfuls of the batter carefully into the hot oil. Fry the fritters, turning occasionally, until both sides are golden brown and crispy, about 2-3 minutes per side.
- Drain Excess Oil: Remove the fritter bites from the oil with a slotted spoon and place them onto a plate lined with paper towels to absorb excess oil.
- Prepare Glaze: In a medium bowl, whisk together the powdered sugar, vanilla extract, and 3 to 4 tablespoons of whole milk until smooth and slightly thickened.
- Glaze Fritters: When the fritters have cooled slightly but remain warm, dip them into the vanilla glaze to coat evenly. Place the glazed fritters on a parchment-lined baking sheet or plate to set.
Notes
- Ensure oil temperature is properly hot before frying to avoid greasy fritters.
- Use Granny Smith apples for a tart contrast; other firm apples can be used but may alter flavor.
- The glaze can be adjusted with more or less milk to reach desired consistency.
- Serve fritter bites warm for best flavor and texture.
- Store any leftovers in an airtight container and reheat briefly in the oven to restore crispiness.
